Chef Hale has the expertise and the passion to create an experience like no other for all of Allsopp & Chapple’s guests.
Chef Hale began his culinary career in New Orleans, however, he has been a mainstay of the Little Rock food scene since 1995. He honed his craft as a sous chef at two renowned Little Rock restaurants – Andrè’s and Spaulè.
Chef Hale opened his own restaurant in 1999 – Acadia in Hillcrest, where he earned a coveted James Beard nomination. Acadia was critically acclaimed, receiving numerous awards and established Chef Hale as one of Little Rock’s premier chefs.
After 16 years at Acadia, Chef Hale joined Little Rock’s iconic Capital Hotel, working alongside a Michelin-starred and James Beard award winner. Soon after joining the culinary team there, he was named the Executive Chef at Capital Bar & Grill.
Allsopp & Chapple was proud to announce Chef Hale as Executive Chef in 2022.

General Manager Dillon Garcia
Dillon began his restaurant career at Ashley’s at The Capital in downtown Little Rock. He later became a co-owner of The Pizzeria in the Heights before joining the Allsopp & Chapple team in 2022. Dillon is the founder and owner of Arkansas Mixology Associates, providing expert bar consulting and top-notch event bartending services in the state.
Dillon has a passion for hospitality and craft cocktails which has led him to be the former president of the Arkansas chapter of the U.S. Bartender’s Guild, and he currently sits on the board of directors for the Arkansas Restaurant Association. Additionally, he was awarded the 2023 Emerging Hospitality Leader of the Year by the Arkansas Hospitality Association.
Dillon originally joined Allsopp & Chapple as the bar manager, using his knowledge and passion to elevate the craft cocktail program to its highly acclaimed status that it maintains today. As General Manager, he has taken Allsopp & Chapple to new heights consistently earning the restaurant “Best Service in Central Arkansas” accolades from OpenTable.

Where It All Began
Allsopp & Chapple Bookstore was once the premier bookseller in Arkansas, occupying the historic Rose Building shortly after it was constructed. Established by Fred W. Allsopp and James Chapple, the bookstore was a mainstay in downtown Little Rock for over six decades, becoming a landmark of Main Street’s vibrant and bustling business district.
